Required products :

  • 1 kg of pumpkin, peeled and cut into slices
  • 1 red onion, cut into octopuses
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 8 eggs
  • 1/2 cup fresh milk
  • 2-3 sprigs of parsley, chopped
  • 200 grams of feta cheese, sliced ​​(or plain cheese)
  • 120 grams of dried tomatoes, drained of fat

Method of preparation :

Put the pumpkin, onion, cumin and olive oil in a large bowl and stir to taste well. Transfer them to a large pan (pre-cover with parchment paper) and bake for 25-30 minutes until soft. Set aside to cool the vegetables for about 5-6 minutes.

Meanwhile, beat the eggs with the milk and parsley, season. Transfer the vegetables to a 22 cm diameter pan, add the sun-dried tomatoes, cheese and pour over the egg mixture. Bake for 20-25 minutes until golden brown.

Allow the vegetable fries to cool for 10 minutes before serving.
