How To Cook Garlic Cream Soup With Mushrooms, Toast And Parmesan - Recipe

Required products :

  • 5-6 tea cups of bread, cut into cubes
  • 2 heads of garlic, roasted in foil and divided into cloves
  • 1 tablespoon olive oil
  • 230 grams of mushrooms, cut into slices
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 stalks of fresh thyme
  • 3 1/2 teaspoons chicken broth
  • 1/2 teaspoon cream
  • salt and pepper to taste
  • grated parmesan

Method of preparation :

 

  • Preheat oven to 200 degrees.
  • Distribute the bread cubes in a pan and bake them for about 10-15 minutes until they are slightly crispy. Take 1 tea cup of them to garnish the soup.
  • Melt the butter in a large skillet over medium heat and saute the mushrooms until soft and lightly browned. Remove from the heat.
  • Heat olive oil in a saucepan over medium heat and saute onions for about 2-3 minutes.
  • Add the thyme and chicken broth and simmer for 5 minutes.
  • Reduce the heat, remove the thyme stalks and add the cream, roasted garlic and bread cubes.
  • Stir and puree to the desired consistency.
  • Season with salt and pepper and stir again.
  • Serve the cream of roasted garlic soup warm, garnished with mushrooms, toast and parmesan.
