Prepare a fragrant mushroom soup with herbal oil for a hot lunch when you have a cold or just want to warm up. Use fresh green spices to flavor the garlic soup and serve with toasted wholemeal bread.

Required products :

for herbal oil:

  • 50 milliliters of olive oil
  • 50 milliliters of oil
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped fresh coriander
  • pinch of salt

for the soup:

  • 1 kg of mushrooms
  • finely chopped onion head
  • finely grated ginger root
  • head of garlic, finely chopped
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 teaspoons vegetable broth
  • 1/4 tea cup sour cream
  • salt and pepper to taste

Method of preparation :

Make the butter from the previous day by mixing olive oil with spices, heat over low heat and cool.

Put the butter in a saucepan, heat and fry the finely chopped garlic and onion. Add the mushrooms, ginger and season with salt and pepper to taste.

Combine the broth with the flour, stir and pour into the mixture. Let the dish simmer on low heat until ready. Cool and season the soup with sour cream. Serve warm, garnished with a few mushrooms, garlic cloves and herbal oil.

Tip: You can replace the vegetable broth with chicken, beef or another to your liking. If you do not want to smell the garlic soup, just do not include it in the recipe. You can add a variety of vegetables, such as potatoes, carrots, peppers, to make the dish even richer and more fragrant. If desired, you can puree the mushroom soup and serve with croutons.
