Method of preparation:
Preheat the oven to 180 degrees and cover a rectangular pan with a sheet of parchment. Combine all dry ingredients and stir until mixed. Add the butter and stir until a crumbly mixture is obtained.
Beat the eggs with the sugar and in another bowl combine the milk with the vanilla and lemon essence. Combine the mixtures, mix until smooth and pour the dough into the pan. Smooth the surface and bake for 25 minutes, cool.
In a bowl pour the milk, add the sugar, vanilla, starch and mix until smooth. Dissolve the gelatin, heat it, add the sugar and stir. Combine the milk with this mixture and pour over the base. Cool for an hour and add the halved apricots. Return to cool for another 1-2 hours, cut and serve.
