These biscuit sandwiches have a very delicate cream and aroma of winter spices - cloves, nutmeg and cardamom. They are not only the perfect treat with a glass of hot drink, but also do not contain gluten.

Method of preparation :
To make the biscuits, beat the butter, sugar, jam, egg and vanilla with a mixer until smooth.
In another bowl, mix the baking soda, flour, ginger and spices. Pour the dry ingredients into the liquid ones and stir until a very sticky dough forms. Cover with plastic wrap and refrigerate for at least 4 hours.
Preheat oven to 180 degrees and line the bottom of two baking trays with parchment paper.
Form small and flat balls from the dough and roll them in Demerara brown sugar (or another). Arrange the biscuits in the trays at a distance of 2.5 cm from each other. Bake for 14 minutes or until lightly browned at the edges. Cool.
To prepare the cream, mix the mascarpone with the lemon cream until smooth. Fill in a bag with a suitable nozzle.
Coat one biscuit with cream and stick with another. Continue until the cookies run out.
