Required products :

  • 1 kg of carrots
  • olive oil
  • head of garlic
  • 4 bay leaves - dried or fresh
  • 4 tangerines
  • 50 grams of butter
  • 1 teaspoon honey
  • 1 tablespoon vinegar

Method of preparation :

Preheat oven to 180 degrees.

Peel the carrots and peel them.

Put them between two skewers and place at one end of the knife. Start turning the carrot and you will cut it in a spiral, without cutting the carrot completely and dividing it.

Put them in two large pans, pour olive oil, season with salt and pepper, mix well.

Without peeling the garlic, put a few cloves in both pans, put the bay leaf and cover with foil. Bake for 1 hour, remove the foil and bake for another 20 minutes.

Meanwhile, make the glaze - finely grate the peel of the tangerines and squeeze their juice.

Melt the butter and add the mandarin juice, vinegar and honey, season to taste.

Pour the sauce over the carrots and stir, bake for another 15-20 minutes until caramelized.

Squeeze the garlic from the cloves and serve the carrots.
