Preheat the oven to 170 degrees.
Cover a rectangular tray measuring 20 by 30 centimeters with baking paper.
Melt the butter and 250 grams of chocolate in a water bath until melted and combined.
Remove from the heat and quickly add the eggs, sugar, flour, cocoa, 2 cups cherries and 1 teaspoon grated coconut.
Stir to combine the products. Pour the dough into the prepared pan and with a stick burst all the resulting bubbles.
Bake for 25-30 minutes until the cake is firm, and in a stick test, it comes out dry.
Cool for 20 minutes, then remove from the pan and cool completely.
Meanwhile, put the cream in a small saucepan and bring to a boil. Add the remaining chocolate inside and stir to make ganache.
Leave for 20-40 minutes for the chocolate to reach room temperature.
Mix the remaining 1/2 cup of cherries with the coconut shavings and stir to turn the coconut pink.
Take out the cherries and put them away for another recipe (or eat them :)).
Spread the cake with chocolate ganache and sprinkle with colored coconut shavings, add some fresh cherries for decoration, if desired.
