Necessary products:

for the cake:

  • 3 cups almond flour
  • 1 tablespoon cinnamon powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 large eggs
  • 3/4 cup sugar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped walnuts

for the glaze:

  • 350 grams of low-fat cream cheese, soft
  • 1/4 cup low-fat yogurt
  • 1/2 cup powdered sugar
  • 1/4 teaspoon coconut extract (optional)
  • 1/4 cup roasted walnuts, chopped (optional)

Method of preparation:

Preheat oven to 160 degrees.

Place in two round trays of parchment paper. Spread them on the sides and on the paper with coconut oil.

Mix the almond flour, cinnamon, ginger, cloves, baking soda and salt in a large bowl and mix to combine all the ingredients well.

In a medium bowl, beat the eggs, sugar, coconut oil and vanilla. Add the carrots and 1 cup walnuts (optional). Homogenize.

Pour the wet ingredients into the dry ones and stir until well combined. Distribute the mixture in the two trays evenly.

Bake for 30-35 minutes or until done. Allow the countertops to cool for 10 minutes, then remove and place on a
wire rack to cool completely.

glaze:

Beat the cream cheese, yoghurt, sugar and coconut extract in a medium bowl with a mixer until smooth.

assembling the cake:

Place the carrot cake on a cake stand or plate and apply 1/2 cup of icing evenly. Place the second tray on top and spread the remaining icing, including on the side of the cake. Garnish with walnuts if desired.

Carrot cake can be stored in the refrigerator for up to 2 days.
