How To Cook Gluten Free Consonant Cookies With Sweet Potatoes - Recipe

Required products :

  • 2 sweet potatoes (about 400 grams in total)
  • 40 milliliters of maple syrup
  • 1 egg - broken
  • 200 grams of gluten-free flour
  • 50 grams of ground almonds
  • 25 grams of sugar
  • 1/2 teaspoon baking powder (gluten free)
  • 1/4 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • a pinch of nutmeg
  • 1/2 teaspoon cinnamon
  • 60 grams of butter

Method of preparation :

Preheat the oven to 180 degrees and line a baking tray with parchment paper.

Wrap the potatoes in foil and bake for 1 hour until completely soft. Allow them to cool, then carve their insides, measure 250 grams of it, which you put in a food processor. Blend with the maple syrup until a smooth puree is obtained. Add the eggs and mix again to combine.

In a bowl, add the flour, ground almonds, sugar, baking powder, xanthan gum, salt, nutmeg and cinnamon. Add the butter and rub with your fingers to become crumbs.

Pour the puree and knead a soft dough that does not stick (you may not need to use the entire amount of potatoes).

Transfer the dough to a well floured surface and roll it out to a thickness of about 2.5 centimeters. Cut circles 6 cm in diameter and arrange in the tray.

Bake them for 12-15 minutes until golden.

Serve slightly warm with butter.
