Thinly peel the green walnuts (use gloves to keep your hands from staining). Fill with cold water and leave for 6 days, changing the water 3-4 times a day until the walnuts darken. Then drain the liquid and immerse them in lime water (make a solution of 1 - 2 tablespoons of slaked lime and 1 liter of water), let stand 24 hours, stirring occasionally. After this procedure, you should wash the walnuts with cold water and pierce each of them with a fork or a suitable skewer in 10-15 places. Wash again and put in boiling water to which you have added alum (alum) in a ratio of 75 grams of the substance per 5 liters of water. Put on the stove and cook for 10 minutes, strain and transfer the walnuts to a bowl of cold water. Leave in it for 1 hour.
Make sugar syrup and add the walnuts and spices that you have previously tied in a "gauze bag". Cook for a few minutes, remove from the heat and leave for a day. This is done 3 times. Then boil the walnuts until ready in the syrup, removing the fragrant bundle.
It only remains to close in jars.
