How To Cook Grilled Chicken Skewers With Vegetables And Arugula Pesto - Recipe

Necessary products

for the pesto:

  • 2 cups baby arugula leaves
  • 1 cup fresh basil leaves
  • 1/4 cup roasted pine nuts
  • 2 cloves garlic, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons extra virgin olive oil

for skewers:

  • 1 small zucchini, cut into crescents
  • 1 small yellow pumpkin, cut into crescents
  • 1 small head of sweet onion, cut into 8 pieces
  • 1 teaspoon of vinegar
  • 1 tablespoon extra virgin olive oil
  • 600 grams of chicken breasts cut into chunks

* A tea cup is used to measure the quantities.

Method of preparation

arugula pesto:

Blend to a homogeneous and smooth texture arugula, basil, pine nuts, garlic, lemon juice, salt, pepper and 4 tablespoons olive oil.

skewers:

Put the zucchini, pumpkin and onion cut into crescents in a bowl and season with vinegar, 2 tablespoons of pesto and 1 tablespoon of olive oil. Season the chicken with 2 tablespoons of pesto in a separate bowl.

Preheat the grill and grease it. String the chicken and vegetables on skewers in succession and grill for about 4 minutes on the side or until done. Serve the skewers with arugula pesto.
