Required products :

  • 3 cloves garlic, cut into slices
  • 2 tablespoons chopped rosemary
  • 2 tablespoons + 1/2 teaspoon olive oil + more peppers
  • 12 lamb ribs
  • salt and pepper
  • 1 teaspoon parsley, chopped stems
  • 1/2 cup dill
  • 1 lemon
  • 12-16 long thin peppers

Method of preparation :

Put garlic, rosemary and 2 tablespoons of olive oil in a mortar and crush to make a paste.

Season the meat with salt and pepper. Spread it with garlic paste and leave to marinate for 30 minutes at room temperature or refrigerate for 12 hours.

Put parsley and dill in a mortar and salt. Mash well, grate the rind of the lemon. Then cut it in half and squeeze the juice from the halves of the spices. Add half a cup of olive oil and season with salt if needed.

Turn on the grill. Roast the lamb chops for 10 minutes on each side until done. Transfer them to a plate and let them rest for 5-10 minutes before serving.

While the chops are baking, put the peppers in a bowl and pour generously with olive oil. Add salt and grill them, then season with vinegar.

Serve the lamb with the peppers and the herbal parsley sauce.
