The hard sugar coating for cakes is made from powdered sugar by adding water, gelatin and lemon juice. Glycerin and oil can also be used. They are applied so that the glaze does not dry quickly. Knead the sugar mixture for about 15 minutes. It is best to do this on a counter sprinkled with powdered sugar, and starch can be used for this purpose. The table is sprinkled so that the coating does not stick to it and on your hands during work.

If not used immediately, wrap in plastic wrap and refrigerate for no more than 2 weeks.

Necessary products:

450 (+/- 50) grams of powdered sugar

2 teaspoons gelatin powder

50 milliliters of water

Method of preparation:

Put gelatin in a bowl of cold water, stir and allow to swell. Dissolve it in a water bath and allow to cool. Sift the powdered sugar, pour in the gelatin and mix until smooth. Form a ball, which you put in a plastic bag. If the mixture becomes sticky, add more powdered sugar.
