In Bulgarian cuisine there are a variety of snacks, sauces, additives to main dishes, lutenitsa, hot peppers and other appetizing performances that can be consumed just like that ... on a slice of bread. This is exactly the case with our current proposal, which is called appetite . Is there a need for more words and introductions when the name alone is enough to understand that this is something worth preparing and trying.

Recipes for making appetite are varied. What they all have in common is that the base of all of them is usually made of tomatoes and / or peppers. And this one is no exception, as the tomatoes are boiled and mashed. The spices are represented by the traditional parsley and garlic, and you can already imagine what aroma is carried in the air, just while reading. Some hosts add thyme and oregano, but we will not use. But enough talk, here's the recipe.

What products are needed to make your appetite:

  • 5-6 kg of roasted red peppers (gate)
  • 1 kg of chorbadji peppers
  • 2 heads of garlic
  • 800 grams of tomato puree
  • parsley
  • ground black pepper to taste
For the marinade you need:
  • 2 teaspoons oil
  • 2 teaspoons vinegar
  • 2 teaspoons of sugar (maybe less)
  • 4 tablespoons salt

How to make appetite

Pour the oil and vinegar into a suitable large bowl, add the sugar and salt. When the marinade boils, pour in the raw and chopped chorbadji peppers (cut them into pieces about 1-2 cm long). Let it fry for 10 minutes and then add the roasted, peeled and finely chopped red peppers. After another 10 minutes of frying, add the tomato puree (boiled tomatoes). Everything is prepared for another 10-15 minutes, not forgetting to stir.

When you remove the pan from the heat, add the peeled and finely chopped garlic, chopped fresh parsley and ground black pepper to taste.

Stir the appetite and distribute in jars, which sterilize for 20 minutes in boiling water.

 

When ready, turn the lids upside down until the contents have cooled completely.
