Necessary products:

400 grams of sugar

50 milliliters of lemon juice

200 milliliters of boiled water

Method of preparation:

Take a suitable bowl with a thick bottom and mix the water and sugar in it. Stir well to dissolve the sugar. When the mixture boils, add the lemon juice. Allow the combination to cook for 45 minutes on low heat without stirring. The temperature should be around 110 degrees, this is very important for the crystallization of the sugar and the consistency of the syrup. When it begins to acquire a copper color, periodically check the flowability of the mixture. The syrup should not be thick at this stage, but slightly more liquid than honey.

 

Then distribute the sweetness in pre-sterilized jars and allow to cool. After 1 - 2 days the required honey consistency will be obtained.
