Required products :

  • 3 kilograms of ripe prunes
  • 1 1/2 pounds of sugar
  • 2 teaspoons water

Method of preparation :

  • Wash the prunes thoroughly under cold running water, cut them in half and remove the stones.
  • Transfer to a large bowl, sprinkle with sugar and mix well to cover evenly.
  • Allow them to stand at room temperature for 1 hour.
  • Transfer the plums to a large saucepan, along with the separated juice, add the water and heat them over medium heat.
  • Bring the mixture to a boil and reduce the heat.
  • Let the marmalade simmer for 10 minutes, stirring occasionally.
  • Remove from the heat and, after cooling, puree until smooth.
  • Return the pan to the hob and reheat over medium heat.
  • Once the mixture simmers, reduce the heat and cook for another 10-15 minutes or until desired density.
  • Pour the hot marmalade into clean and dry glass jars and close them tightly.
  • Turn the caps upside down and allow to cool completely.
  • Serve with homemade pancakes, soft cakes, a slice of butter or use it in cake recipes.
