Required products :

  • 1 kg of quinces
  • 2 teaspoons water
  • 3 teaspoons sugar
  • 6 tablespoons freshly squeezed lemon juice

Method of preparation :

 

  • Wash the fruit thoroughly, clean it of seeds and cut.
  • In a large saucepan, mix the water, sugar and lemon juice.
  • Add the quince pieces and stir to cover with the sugar mixture.
  • Heat over medium heat until the mixture boils.
  • Reduce the heat, cover the pan with a clean cotton cloth and let the jam simmer on low heat for about 2 hours.
  • Stir every 30 minutes and, if necessary, add more water to prevent burning.
  • When the quinces soften and acquire a dark orange color, remove the pan from the heat.
  • Transfer the jam to an airtight jar and store in the refrigerator or can.
