How To Cook Homemade Walnut Cake With Butter Cocoa Cream - Recipe

Necessary products

For the marshmallows:
16 egg whites
3 teaspoons sugar
pinch of salt
3 teaspoons walnuts (or hazelnuts)
8 tablespoons cornstarch

For the cream:
16 egg yolks
2 teaspoons milk
2 teaspoons sugar
500 grams butter
4 tablespoons cocoa powder

Preparation :
Thoroughly divide the eggs into whites and yolks. Cover the egg white with plastic wrap and leave in a warm place for 24 hours. Cover the bowl with the yolks in the same way, but put it in the fridge.
The next day, beat the egg whites with a pinch of salt until stiff foam is obtained.

 
Without stopping the process, add the sugar and beat for a long time until "hard peaks".

 
Grind the walnuts and mix them with the starch, then start adding in portions to the egg whites. Stir thoroughly after each added portion, the movements should be from the bottom up so that the proteins do not fall.

 
Cover the bottom of the pan with baking paper and pour the walnut mixture into it, flatten.

 
Bake two loaves in the oven at 150 degrees for 10 minutes, then reduce the temperature to 100 and leave for 3 hours to dry. Another hour in a hot oven to dry completely.

 

Make a cream. Beat the yolks with the sugar. Pour the milk gradually, stirring. Put the cream on the stove and stir constantly until it boils. Then remove from the heat, stir for 2-3 minutes and allow to cool to room temperature.

 
When this happens, beat the butter (it should also be at room temperature) and gradually add the milk-egg combination to it. Beat until smooth.
Divide the cream into two parts. In one add the cocoa and beat with a mixer until smooth.

 
Coat one loaf with white cream, put the second loaf and apply a layer of chocolate on it.
Decorate the cake of your choice and serve.
