Pour the walnuts into a bowl.
In a thick-bottomed bowl, heat the cream and add the coffee and salt. Heat until small bubbles form where the cream touches the dish. Add honey and let the mixture boil. When this happens, reduce the heat and let the caramel cook over low heat for about 15-20 minutes, stirring constantly.
Remove the pan from the heat and pour the sweet combination over the walnuts in the bowl. Stir thoroughly. Put the bowl in the refrigerator for 15-20 minutes so that the caramel thickens a bit. Then spread it on parchment (or in suitable molds). Once cool enough, cut into pieces and you can wrap in parchment like candy.
