  • First, bring water to a boil in a large saucepan.
  • When the water heats up, cut off the lower white edges of the celery and the top of the leaf so that only the stems separate. You can freeze the edges so that you can use these parts to make vegetable broth whenever you need it.
  • Cut the celery stalks into 2-3 large pieces and put them in boiling water. Set aside for 1 minute and transfer them immediately under running cold water to stop the cooking process. At this point, if you are busy, you can put them in the refrigerator for 24 hours before continuing to dehydrate them.

Drying in a dehydrator

Cut the celery into about 1 cm pieces and arrange them in the dehydrator.

Dry them at about 65 degrees for 6-8 hours.

Drying in the oven

In the same way, prepare the celery for drying in the oven. Arrange the pieces in a tray and reduce the temperature of the appliance as much as possible. If your oven cannot be reduced below 80 degrees, you must leave it open by supporting its door with a kitchen towel. This loses a lot of electricity, which is inefficient, so if you plan to dry vegetables regularly, it is good to invest in a dehydrator.

Ideally, the drying temperature should again be around 55-60 degrees. The required time is about 6-8 hours. When the vegetables are ready, remove the pans from the oven and cool to room temperature.

Storage

Transfer the celery to glass jars and close with a lid. It is very important that the jars are completely dry. Store in a dark and ventilated place.
