Of course, it is not appropriate to add to salads, because there is no way to develop the taste of celery without heat treatment.
Blanching is one of the main steps in dehydrating celery. The main reason for this is to keep its green color. If you forget to blanch it, you will lose the pleasant color of the plant.
Here's exactly how you should act:
Cut the celery into about 1 cm pieces and arrange them in the dehydrator.
Dry them at about 65 degrees for 6-8 hours.
In the same way, prepare the celery for drying in the oven. Arrange the pieces in a tray and reduce the temperature of the appliance as much as possible. If your oven cannot be reduced below 80 degrees, you must leave it open by supporting its door with a kitchen towel. This loses a lot of electricity, which is inefficient, so if you plan to dry vegetables regularly, it is good to invest in a dehydrator.
Ideally, the drying temperature should again be around 55-60 degrees. The required time is about 6-8 hours. When the vegetables are ready, remove the pans from the oven and cool to room temperature.
Transfer the celery to glass jars and close with a lid. It is very important that the jars are completely dry. Store in a dark and ventilated place.
