And this happens naturally when fat is exposed to excessively long exposure to oxygen. It is rancid, acquires an unpleasant odor and its taste deteriorates significantly. Here's how to avoid it all!
Step 1: Cooling
When you finish frying, turn off the stove and allow the fat to cool to room temperature and not a minute more.
Step 2: Strain
Strain it through a fine sieve, on the bottom of which you have placed some clean gauze. In this way you will remove even the smallest particles that start to burn and add an unpleasant taste the next time you heat it.
Step 3: Storage
Use a funnel to transfer the strained fat into a clean and dry glass container with a tightly closing lid - jar or bottle. Store in a dark and cool place and in no case near the oven.
When reusing frying fat, keep the following in mind :
Remember that you should not dispose of unnecessary fat in the sewer, because it is harmful not only to your pipes, but also to nature.
