How To Cook Icelandic Protein Cake With Blueberries And Skin - Recipe

Healthy raw Icelandic cake with blueberries and high-protein skin.

Required products :

for the base :

  • 1/2 packet of biscuits (cinnamon or wholemeal), crushed
  • 50 grams of melted butter

for cream :

  • 250 grams of skin
  • 250 grams of thick yogurt (or skin)
  • vanilla
  • 500 milliliters of whipped cream
  • 1/2 packet of cinnamon biscuits
  • 50 grams of butter

for topping :

  • 1/2 jar of blueberry jam
  • 250 grams of blueberries

Method of preparation :

Combine the crushed biscuits with the melted butter. Spread the mixture evenly on the bottom of a round cake pan.

Mix the high-protein skin with the whipped cream and stir in a circular motion. Pour the mixture over the biscuit
base. Spread the blueberry jam on top and arrange the blueberry fruit on top. Refrigerate for at least 2 hours,
cut the Icelandic fruit cake into pieces and serve.

Tips & Warnings If you don't have a skin or don't like it, but want to make a high-protein cake, replace it with thick strained or yogurt and add protein powder with different flavors according to the desired results. Use a variety of fruit jams, marmalades or jams and decorate with fresh fruit of your choice. You can crush nuts or sprinkle with coconut shavings. And for the base you can use different types of biscuits.
