Necessary products:

200 g of minced meat

500 g rice (for risotto)

2 eggs

1 liter of meat broth

80 g butter

1/2 head onion

120 g parmesan

200 g mozzarella

2 tablespoons olive oil

400 ml of tomato puree

100 ml of white wine

Method of preparation:

We start with the preparation of the meat sauce. Fry onions in 30 g of butter and olive oil, add the minced meat and fry until brown. Pour in the wine and wait for it to evaporate. Then add the tomato puree, season with salt and pepper, leave the sauce on the stove for 20 minutes to thicken. Pour the rice into a saucepan and pour the vegetable broth over it. Prepare it on the principle of making risotto (but for about 13 minutes). Remove from the heat and add the butter (50 g) and grated Parmesan cheese. Mix well and put the two eggs.

Pour the rice on a thin layer of baking paper - it will cool faster. Once this happens, form 20 balls. Make a hole in the middle of each, put 2-3 pieces of mozzarella and close the hole.

Beat the eggs for the breading in a bowl, in another pour breadcrumbs. Dip the rice balls in the eggs, then roll in the breadcrumbs. Make sure that they are well "dressed" in breadcrumbs and repeat - egg, breadcrumbs (so you will get a double breading).

Fry the croquettes in oil, turning them with a spoon. The fat should not be too hot during frying, because the mozzarella will spread. Place the finished croquettes on a paper towel to drain off excess oil. Serve hot.
