Necessary products

For the fruit filling:

  • 500 grams of canned cherries in their own juice
  • 250 milliliters of water
  • 300 grams of sugar
  • 20 grams of gelatin + 120 milliliters of water
  • 1 star anise


For the dough:

  • 190 grams of sweetened softened butter
  • 2 tablespoons sour cream with 25% fat
  • 1/2 teaspoon baking soda
  • 1 egg
  • 420 grams of good quality flour

 

Method of preparation :

In a suitable bowl, mix the butter (to be soft), the cream with the baking soda and the egg. Beat with a mixer on low speed.

 

Then gradually add the pre-sifted flour and knead the dough, which is obtained as in the next photo.

 

Shape it into a ball, place in a plastic bag and refrigerate for 20 minutes.

 

Then roll out a piece of dough on a sheet of parchment, the diameter of which is equal to that of the form (detachable), which you will use to bake the cake.

 

Put the dough together with the parchment on the bottom of the dish. Also "dress" the walls with dough, and before that cover them with a sheet of paper. Thoroughly combine the two parts of the dough.

 

Cover the dough with parchment and pour rice, beans, peas, lentils or put some other weight.

 

Bake the marshmallows for at least 30 minutes. Then remove the weight, remove the parchment and return the dough for another 10 minutes in the oven. In this way it will retain its shape.

 

It's time to make the cherry filling.

Dissolve gelatin in 120 milliliters of water, allow it to swell.

Drain the juice of canned cherries in a bowl, pour the water, add anise star and sugar. Put the mixture on the stove to boil.

 

Once this is done, pour all the cherries into it, remove the pan from the heat and remove the anise.

 

When the combination is warmed to 75 degrees, add the swollen gelatin and stir until completely dissolved.

Then allow the fruit filling to cool until the first signs of gelling appear. At this point, pour the cherries into the dough and store the dessert in the refrigerator.

 

It should cool well and the filling should tighten.
