Required products :

  • 6 sheets of gelatin
  • 400 milliliters of coconut milk
  • 325 milliliters of coconut cream
  • 4 tablespoons pure high quality honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons rum
  • 1/4 teaspoon cinnamon
  • a pinch of allspice
  • 1/2 teaspoon grated nutmeg

For the caramel sauce:

  • 75 grams of butter
  • 50 milliliters of soy cooking cream

Method of preparation :

Start by preparing the caramel sauce. Put the sugar in a saucepan and pour 60 milliliters of water. Cook for 2-3 minutes on medium heat. When small bubbles begin to form, shake the casserole slightly, but do not stir! Let it boil for 6-7 minutes until it reaches the desired golden color.

Remove the caramel from the heat and add the cream. The mixture will form a lot of bubbles and will foam, but with constant stirring with wire you will reach a smooth consistency.

Return to the stove for another 2-3 minutes and add a pinch of salt. Remove from the heat and set aside to cool.

Dip the gelatin sheets in cold water and leave for 4-5 minutes until soft.

Meanwhile, heat the coconut milk over medium heat until it starts to boil. At this point, remove the pan from the heat and set aside.

Squeeze the water from the gelatin sheets and dip them in warm coconut milk. Stir to dissolve.

Add the coconut cream, honey, vanilla, rum, cinnamon, nutmeg and allspice to the coconut milk with gelatin. Divide the mixture between 6 muffin tins (preferably silicone) and refrigerate overnight.

When serving, dip the forms in boiling water to easily peel the dessert from them. Turn the cupcake on a plate and pour over the caramel sauce.
