How To Cook Lamb Casserole With Chickpeas, Plums, Quinces And Vegetables - Recipe

Required products :

  • 600 grams of tender lamb
  • 2 onions
  • 3 tablespoons chickpeas
  • 4 medium-sized potatoes
  • 80 grams of sheep fat
  • 15 plums
  • 1 quince
  • 2 sweet peppers
  • 4 tomatoes
  • 4 cloves garlic
  • 3 bay leaves
  • 1/2 hot pepper
  • coriander and parsley to taste
  • salt and spices for lamb

 

Method of preparation :

Soak chickpeas in water for several hours or overnight.

Cut the lamb into portions, arrange them in a saucepan or other suitable dish. Sprinkle with spices, add onion, bay leaves, pour water and cook until the meat softens. Be sure to remove the foam that forms on the surface.

Then remove the meat to a plate and strain the broth, removing the onions and spices.

Divide the lamb into four pots, put in each a coarsely chopped potato, pieces of quince, tomato slices, a little chickpeas, peppers, plums and sheep fat. Add salt, distribute the spices that you previously drained from the liquid, pour the broth.

Close the pots with lids or use aluminum foil.

Put them in the oven and let the dish cook at 200 degrees. Serve with garlic, hot pepper and green spices.
