How To Cook Lamb Meatballs With Hummus And Pomegranate - Recipe

Required products :

  • 2 slices of white bread
  • 500 grams of lamb milk
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cinnamon
  • 1 crush a clove of garlic
  • 3 tablespoons olive oil
  • 1 tablespoon finely chopped shallots
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon flour
  • 300 milliliters of chicken broth
  • 200 grams of hummus
  • 2 tablespoons roasted pine nuts
  • handful of dill, mint, parsley
  • 1/2 teaspoon sumac (optional)
  • 2 tablespoons pomegranate
  • boiled couscous

Method of preparation :

Soak the bread in fresh milk.

Using a food processor, mix the garlic, minced meat, spices and soaked bread. Make a few pulsations to combine. Divide the mixture into 24 meatballs.

Heat 1 tablespoon olive oil in a pan and fry half of the meatballs. In the same pan, add another 1 tablespoon of olive oil and fry the rest.

When the meatballs turn brown, place them on a plate.

Put the last olive oil and fry the two onions for 2-3 minutes. Add the flour and mix. Add the broth and when combined, return the meatballs to the bowl. Cover with a lid and simmer for 12-15 minutes until the meat is completely cooked and the sauce has thickened.

Serve the meatballs with hummus on top, cedar nuts, sumac and pomegranate, serve with boiled couscous.
