How To Cook Lamb Ribs With Garlic In Crispy Parmesan Crust - Recipe

Required products :

2 pieces of lamb ribs (with 8 ribs each)
1.5 teaspoons breadcrumbs
2 cloves garlic
1/2 teaspoon chopped basil
1/4 teaspoon chopped rosemary
3/4 teaspoon grated parmesan
2 tablespoons Dijon mustard
4 tablespoons olive oil
salt and ground black pepper to taste

Method of preparation :

Clean the lamb from the fat, leaving very little of it. Rub it with salt and ground black pepper, then leave for 40 minutes in the refrigerator. When you remove the meat, let it warm to room temperature.

Mix the garlic, basil, rosemary, mustard and grated Parmesan in the bowl of a food processor. Beat until smooth, pouring a little olive oil. Finally add the breadcrumbs and beat a few more times.

Preheat oven to 230 degrees.

Heat olive oil in a pan and fry the ribs on both sides for 2 minutes, placing the fat side down first.

 

Then apply the aromatic mixture on the ribs (the layer should be about 1-1.5 cm, press it with your fingers to the meat). Put the lamb in a pan and place in the oven until done.

 

Then remove and let "rest" for 10 minutes before serving.
