Required products :

12 lamb ribs
300-400 grams of peas (frozen)
6 tablespoons olive oil
2 teaspoons balsamic vinegar
2 tablespoons soy sauce
1 teaspoon mustard seeds
1 tablespoon of honey
sprig thyme
2 sprigs rosemary
2 cm root fresh ginger
2 garlic cloves
connection green onion
small bunch fresh mint
30 grams butter
oil
salt
pepper

 

Method of preparation :

Mix the crushed garlic cloves with the grated ginger, honey, black pepper to taste, mustard, rosemary, thyme. Pour the balsamic vinegar, olive oil and soy sauce. Mix everything and heat the sauce without letting it boil.

Divide the ribs, cutting them into 3 portions each.

Marinate them in the mixture, and it is best to stay in the aromatic combination overnight. If you don't have that much time, a few hours will also work.

Then fry them in olive oil on all sides until golden and wrap in foil. Arrange them in a pan, which you place in an oven preheated to 200 degrees. In 10-12 minutes they will be ready.

Finely chop the green onion, fry it in vegetable oil. Add the chopped mint and a minute later the frozen peas. Let everything fry for a few minutes, then close the pan with a lid and leave the products on the stove until ready.

When you remove the pan from the heat, add salt to taste, add the butter and beat everything with a blender.

The green puree is ready, you can supplement it with dried tomatoes.

Serve the ribs with the delicious garnish.
