Turn the oven to 140 degrees.
Put the fat in a saucepan and after it is clogged, put the meat, frying it on all sides until it turns brown. Remove the meat to a plate.
In the same pan fry onions, carrots, garlic, celery until soft, season with a little salt. Return the meat to the pan, add the thyme, pomegranate juice and season to taste. Pour the broth and cover with a lid. Transfer to the oven and bake for 2 hours - if you do not have a fireproof pot, you can cook everything in a pan under foil.
Remove the dish from the oven, remove the lid and add the small carrots. Return to the oven for another hour and a half until the dish is toasted and the vegetables are soft.
Remove the meat and carrots from the pan. Place the liquid on a hot plate and simmer for 10 minutes to reduce the sauce.
Add peas, return the meat and carrots. Simmer for 4-5 minutes until the peas are soft and all the flavors are combined.
When serving, garnish with mint leaves and sprinkle with pomegranate seeds.
