Required products :

30 grams of dried white mushrooms
2 tablespoons oil
3 small leeks
1 large onion
250 grams of mushrooms
2 teaspoons finely chopped thyme
2 eggs
200 grams of cheese (cow or feta)
250 grams (12 crusts) lasagna
100 grams of goat or cream cheese
200 grams of cheddar cheese
freshly ground black pepper to taste

For the sauce:

2 tablespoons vegetable oil for frying
3 tablespoons wheat flour or einkorn
200 milliliters of mushroom tincture (left over from soaking dried mushrooms)
500 milliliters of fresh milk
salt and ground black pepper to taste


Method of preparation :

Preheat oven to 180 degrees.

Cut the white mushrooms into tiles and pour into a bowl. Fill them with warm water and leave them for 15 minutes.

During this time, put the oil to heat and fry the chopped leeks and onions in it for about 6-8 minutes (until golden). Then add the mushrooms and fry until soft (about 5 minutes).

Once the white mushrooms soften, pour 200 milliliters of the water in which they were soaked for the sauce. Drain them from the liquid with a colander and add them to the pan along with the thyme. After 5-10 minutes, season with salt and ground black pepper to taste and remove from the heat.

It's time for the sauce. Heat the oil and fry the flour lightly in it. Gradually pour in the water that you separated earlier, stirring to avoid lumps. Gradually pour in the milk, stirring constantly. Cook the mixture over low heat (do not stop stirring) until the sauce thickens. Season with salt and ground black pepper and bring to the boil.

In another bowl, beat the eggs and add the shredded cow's cheese (or feta).

You should "assemble" the dish. Use a large form with a length of 26 centimeters. Pour into it 1/3 of the sauce, followed by a layer of lasagna, 1/3 of the mushroom combination with onions. Spread the whole mixture of eggs and cheese on top. On it - a layer of lasagna, half of the remaining sauce, 1/3 of the mushrooms with onions, grated goat cheese and finish the arrangement with lasagna leaves. Drizzle them with the last amount of sauce and spread the
last mushrooms on top. Sprinkle everything with grated cheddar cheese and ground black pepper.

Bake in a preheated oven until golden (about 30-40 minutes).

You can serve with steamed vegetables.
