How To Cook Latvian Pies Stuffed With Pork And Onions (Pies) - Recipe

Pies are popular mini pasta with fillings. Traditionally in Latvia they are consumed at big celebrations such as birthdays, but this does not prevent you from preparing them whenever you feel like it. You can fill them with sauerkraut, mushrooms, minced meat or other ingredients to your liking.

Required products :

for the stuffing:

  • 350 grams of pork, finely chopped
  • 2 onions, finely chopped

for the dough:

  • 1 teaspoon dry yeast
  • 1/4 tea cup lukewarm water
  • 1/4 cup butter
  • 3/4 cup fresh milk
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 1/2 cups flour
  • 1 egg + 1 more to spread (optional)

Method of preparation :

Fry the onion and pork until cooked through and set aside.

Dissolve the dry yeast in lukewarm water. Heat the milk, butter and sugar on a very low heat. Mix the dry with the wet ingredients and add the salt, flour and egg. Make a dough, leave it to rise, then roll out in a greased pan and cut into pieces. Put about 1 tablespoon of pork and onion stuffing on each, close and shape into cigars.

Bake in a preheated oven at 180 degrees for about 30 minutes. Optionally, spread with egg before baking.

Remove the pies from the oven and sprinkle with a few drops of water, leave to rest, covered with a towel for 10 minutes and serve.
