Put the fat in a pan and fry the onion, garlic, ginger and cinnamon. After 5 minutes, when the onion is soft, add the rice and tomato paste. Stir and after 3 minutes, when the rice is well covered with spices, add the broth and salt. Once the liquid boils, reduce the heat. Let simmer for 10-15 minutes, until the rice is ready.
Remove from the heat and place a towel on the pan and the lid on top, this way the liquid will be absorbed by the steam and the rice will remain fluffy. Stir with a fork and add the raisins, almonds and parsley.
Serve the dish immediately or after it reaches room temperature.
