How To Cook Lemon Cake With Fresh Milk And Raspberries - Recipe

Required products :

  • 4 eggs (at room temperature)
  • 200 grams of powdered sugar and a little to sprinkle
  • 2 teaspoons lemon peel (grated)
  • 2 tablespoons lemon juice
  • 100 grams of flour
  • 120 grams of melted but not hot butter
  • 600 milliliters of warm milk
  • 1 tablespoon sugar
  • 120 grams of raspberries for decoration (can be fresh or frozen)
  • whipped cream for decoration

 

Method of preparation :

Preheat the oven to 180 degrees. Grease a square shape (with a side of 21 cm) with oil and cover with a sheet of parchment.

Beat the yolks and powdered sugar with a mixer until you get a fluffy light cream, to which you add the lemon peel and juice. Stir.

Add the flour, melted butter and beat again (on low speed), gradually pouring in the milk.

Make a thick light foam from the egg whites, add a spoonful of sugar and beat once more until the foam hardens.

With a large spoon scoop out of it and add 3 parts to the dough, stirring thoroughly.

Then transfer the mixture to the prepared form and spread the raspberries on the surface.

Bake the cake in the already hot oven (about an hour). Allow to cool completely and then cut into pieces.

Sprinkle with powdered sugar and garnish with raspberries and whipped cream.
