Necessary products:

 

  • 400 grams of finely chopped pork
  • 2 peeled and grated carrots
  • cherry leaves, finely chopped
  • 1 onion, grated
  • 1-2 chopped peppers
  • 2 ripe tomatoes, grated
  • 1-2 potatoes
  • salt, pepper
  • lemon juice to taste
  • 30 milliliters of olive oil
  • 1 tablespoon dried tarragon
  • 1/2 teaspoon dried oregano
  • 2 egg yolks, broken
  • a few cloves of garlic
  • water about two liters

 

Method of preparation:

 

Pour the fat into a saucepan and heat it. Fry the meat and season it with salt, pepper and garlic. Stir and after 2-3 minutes add the carrots, celery, onions, peppers, tomatoes and potatoes, finely chopped. Stir the mixture and pour the water.

 

Season with oregano, tarragon and lemon juice. Allow the soup to cook over low heat, stir it periodically and after 30-40 minutes turn off the stove. You can build it still hot with the beaten yolks.

Due to the lack of protein there is no danger of the dish being cut. Combine a ladle of broth with the yolks, stir and pour back into the soup. Distribute in bowls and serve warm.
