Necessary products:

120 - 130 grams of cheddar or parmesan cheese (maybe other)

600 milliliters of fresh milk

40 grams of butter

40 - 50 grams of flour

1/2 teaspoon grated nutmeg

salt and pepper - to taste

Method of preparation:

Pour the milk into a saucepan and put on medium heat. Add the butter. When it warms up, pour in the flour, stirring with a wire whisk so that no lumps form. Once the mixture boils, reduce the temperature to a minimum and do not stop stirring for another 4 - 5 minutes (the consistency should become homogeneous). Then pour the cheese, which you have previously grated very finely, add the nutmeg, salt, pepper and stir until the cheese melts - another 5 minutes (the mixture should be absolutely homogeneous).

This sauce is usually served hot. When it cools, it thickens. It is suitable as an addition to vegetable dishes, pasta, french fries, casserole. The most delicious is obtained if you use cheddar cheese.
