Required products :

For the dough :

  • 2 tablespoons olive oil
  • 1 2/3 tea cups flour
  • 1/2 teaspoon salt
  • water to a firm dough

About the filling :

  • 1 teaspoon fresh spinach, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 3 green onion stalks, finely chopped
  • 1 tablespoon dill, finely chopped
  • 1 clove of garlic, grated
  • salt and freshly ground black pepper
  • 1-2 tablespoons lemon juice

Method of preparation :

  • In a medium bowl, mix the olive oil, flour, salt and water until kneaded into a stiff dough.
  • Knead with your hands for 5 minutes, wrap in plastic wrap and let it rest at room temperature for about 20 minutes.
  • In another bowl, mix the spinach, parsley, green onions, dill and garlic.
  • Stir and season with salt, freshly ground black pepper and lemon juice.
  • Roll out the dough on a floured surface to a thickness of about 2 millimeters.
  • Cut into rectangles measuring approximately 8 x 6 cm.
  • In the center of each of them put 1 teaspoon of the filling and fold the corners over it, forming an envelope. Wet your fingers and seal the edges.
  • Heat olive oil to a depth of about 1 centimeter in a large skillet over medium heat.
  • Fry the pies for 1-2 minutes on each side until golden brown spots form.
  • Transfer to kitchen paper to drain off the fat.
  • Serve hot and enjoy.
