Required products :

  • 100 grams of almonds
  • 3 tablespoons coconut shavings
  • 7 pitted dates
  • pinch of salt
  • 2 avocados
  • 4 tablespoons coconut oil
  • 2 tablespoons honey
  • a handful of mint leaves
  • 1 teaspoon grated lime peel
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey or other sugar substitute


For decoration:

  • 2 slices of lime
  • mint stalk


Method of preparation :

Dates should be large and soft, and avocados well ripened, also soft. Scoop out the flesh of the avocado with a teaspoon. Melt the coconut oil and leave for about 3 hours at room temperature to melt.

Prepare a detachable cake tin with a diameter of 16 centimeters. Cover the bottom with baking paper.

The swamp

Mix almonds, coconut shavings and dates in a food processor. Grind them with the S-shaped blade until you get a sticky mass, which you spread on the paper in the prepared container and press tightly to the bottom.

The mousse

Combine and grind (use the appliance again with the same blade) the avocado, coconut oil, lime juice and peel and honey. Once you get a gentle mousse, spread it on the marsh.

Put the dessert in the refrigerator overnight or put it in the chamber for 3-4 hours.

If the cake is frozen, thaw it completely before serving. Garnish with slices of lime and mint leaves.
