Required products :

for marshes:

  • 225 grams of soft butter
  • 225 grams of sugar
  • 4 eggs
  • 225 flour
  • finely grated rind of 2 limes
  • 50 grams of yogurt
  • slices of lime and sprigs of mint for decoration

for syruping:

  • 3 lime juice (about 90 milliliters)
  • 100 grams of brown sugar
  • 1 small handful of mint, petals cut
  • 120 milliliters of white rum

for cream:

  • 150 grams of soft butter
  • 400 grams of sifted powdered sugar
  • bark of 2 limes
  • 50 grams of cream cheese

Method of preparation :

Turn the oven to 180 degrees.

Spread two 20 cm cake tins and place a sheet of parchment paper in them.

Put the butter and sugar in a bowl and mix with a mixer for 5 minutes. Add the eggs one by one when they are absorbed, add the flour and grated lime peel. You should also add yogurt. Divide the mixture in the two pans and bake for about 25-30 minutes.

Cool briefly in the tins, then remove from the pans and allow the countertops to cool completely to room temperature.

Prepare the syrup: put half a lemon juice in a saucepan and add sugar, mint leaves and a spoonful of water. Put on the stove and simmer for 7-10 minutes until a syrup is obtained. Remove from the heat and add the remaining lemon juice and rum. Allow to cool for 10 minutes.

Punch the marshmallows with a stick and pour the syrup. Allow to cool completely again.

Prepare the butter cream: the soft butter and sugar, together with the grated citrus peel, mix with a mixer for about 5 minutes. Add the cream cheese, and when a soft cream is obtained, stop whipping.

Put one loaf on a tray and spread 1/3 of the cream on top. Place the other loaf on top and spread the cake with the remaining cream.

Decorate with slices of lime and mint.
