Required products :

  • 3 cucumbers, cut very thinly
  • left
  • 4 tablespoons lemon juice
  • 1/4 teaspoon oil of your choice
  • about 3 centimeters of ginger root, finely chopped or grated
  • 1/2 cup peanut butter
  • 2 tablespoons + 2 teaspoons soy sauce
  • 3 tablespoons hot chili sauce
  • 2 teaspoons honey
  • 220 grams of tempeh, crushed into small pieces (how much chickpeas)
  • 300 grams of noodles
  • onion and parsley for serving

Method of preparation :

Put the cucumber in a small bowl, season with salt and squeeze as much liquid as possible with your hands. Add 1 tablespoon of lemon juice to the drained cucumbers and stir. If necessary, season with salt.

Heat 2 tablespoons of fat in a pan. Fry the ginger and garlic for 1-2 minutes. Transfer to a bowl and add the peanut butter, 2 tablespoons lemon juice and soy sauce, add 1 tablespoon hot sauce, 1 tablespoon honey and 1/3 teaspoon hot water. Stir to combine, if necessary add another 1 tablespoon of hot water. Season with salt.

Put 2 more spoons of olive oil in the pan and fry the pieces of tempee, seasoned with salt, until browned. Add another 1 tablespoon of olive oil and stir, fry until dark brown - about 3-5 minutes.

Mix the remaining 2 teaspoons of soy sauce, 1 teaspoon of hot sauce, 1 teaspoon of honey and 1 tablespoon of hot water in a small bowl. Reduce the temperature of the pan and pour the mixture into the pan, stirring to roll all the pieces of tempeh in the sauce. Continue cooking for another 1-2 minutes, then transfer to a plate. Season with salt.

Meanwhile, boil the noodles until ready, adding 1 tablespoon of fat at the end so that they do not stick. Add the peanut butter sauce and mix well. If necessary, add a little of the water in which you boiled the pasta.

Distribute the pasta between serving plates, sprinkle with pieces of tempeh, cucumber, a few slices of green onion and parsley. Serve with lemon slices.
