Required products :

900 grams of old onions
1 teaspoon dark beer
5 teaspoons beef broth (or another of your choice)
1 clove garlic
100 grams butter
2 tablespoons olive
salt and ground black pepper to taste

bread and 100 grams of grated yellow cheese to serve the finished soup

 

Method of preparation :

Peel an onion and cut it into straws. Pour into a large saucepan and fry over medium heat in a mixture of olive oil and butter. Season to taste with salt and ground black pepper. Cut the head of garlic in half and put in a saucepan. Reduce heat to low, allow onion to simmer until caramelized.

In a separate bowl, pour the broth and bring to a boil. When this happens, pour it over the onion. Let it boil at the lowest possible temperature for about an hour. Then add the beer.

Preheat oven to 200 degrees.

Divide the soup into suitable bowls, put in each slice of bread, sprinkle with grated cheese and place them in the oven until the cheese melts.
