How To Cook Pancakes With Sweet Curd And Raisin Filling - Recipe

Required products :

For the dough :

100 grams of flour

4 large eggs

2.5 grams of salt

30 - 70 grams of sugar

200 milliliters of fresh milk

100 milliliters of cream

30 grams of unsalted butter

2 tablespoons beer

 

About the filling :

450 grams of cottage cheese

50 grams of crystal or powdered sugar

50 grams of raisins

 

Method of preparation :

Beat the eggs lightly, they should be at room temperature, the same applies to milk and cream. If the eggs are very small, use 6 pieces.

 

Mix the flour, sugar, salt and sift the combination into the eggs and mix well with a mixer or using a wire whisk.

 

Melt the butter at the lowest temperature on the hob and set aside for the moment.

 

In a measuring cup, mix the milk and cream.

 

With constant stirring, pour a thin stream of milk mixture into the combination of eggs and flour. Mix everything until smooth.

 

Do the same with the melted butter.

 

Add 2 tablespoons of beer (if you do not like the taste of beer, you can skip it).

Let the dough "rest" for 20 minutes.

Make the filling by mixing the cottage cheese, sugar and raisins.

 

Heat a frying pan, sprinkle it with oil and prepare a small wooden stick to flatten the dough, a cup with a capacity of 60 ml, a wooden spatula and a plate for the finished pancakes.

Scrape the dough from the cup, pour it into the middle of the pan, flatten with a wooden stick and bake until the edges start to turn slightly red.

 

Then, with quick movements, turn the pancake on the other side and bake for a few seconds and remove. If you hold it, it will become dry and brittle.

 

Put 1-2 soups of the filling in the middle of the finished pancake and "fold" it.

  

In the same way, make more pancakes from the rest of the dough.

 

You can pour condensed milk or honey, make tea or coffee and enjoy your delicious pancakes.
