Pour water into a medium saucepan, bring to a boil and then put parsley in it for no more than a minute. Immediately remove it and place in a bowl of ice water for another minute.
Remove the ligaments from the liquid, dry them and leave for a moment.
Heat the oil on a hot plate over medium heat, add the crushed garlic cloves, finely chopped onion, salt and pepper at your discretion.
Let the products cook for 6 minutes, stirring until the onions are soft. Then pour the broth with the cream and wait for the liquid to boil. Boil for 15-20 minutes, add parsley and 5 minutes later pour the lemon juice.
Transfer the soup to a blender and puree. Then, if you prefer, you can pass through a sieve to get a fine consistency.
Drizzle with a little olive oil and garnish with green spices.
