Required products :

  • 340 grams of pasta
  • 5 slices of bacon, cut into cubes
  • 2 avocados, cut into cubes
  • salt and freshly ground black pepper

For the dressing :

  • 3/4 teaspoon mayonnaise
  • 1/4 freshly squeezed lemon juice
  • 1 1/2 tablespoons grated lemon peel
  • 1 tablespoon sugar
  • 1 teaspoon fresh thyme leaves
  • salt and freshly ground black pepper
  • 1/3 tea cup olive oil

For sprinkling :

  • 2 tablespoons fresh thyme leaves

Method of preparation :

  • To prepare the dressing, mix the mayonnaise, lemon juice, grated lemon peel, sugar and thyme.
  • Mash in a food processor or blender, gradually adding olive oil. Season with salt and pepper to taste.
  • Boil the pasta in salted boiling water, following the instructions on the package. Drain.
  • Bake the bacon in a large skillet over medium heat for 6-8 minutes until slightly crispy.
  • Transfer to kitchen paper to drain off excess fat.
  • In a large bowl, mix the pasta, bacon, chopped avocado and season with salt and pepper to taste.
  • Sprinkle with dressing and stir to distribute evenly.
  • Serve the salad garnished with fresh thyme leaves.
