Method of preparation:
Swamps
Beat the egg whites with the sugar until you get a thick homogeneous mixture, add the cornstarch, cream and vanilla.
Cover the pan with a sheet of parchment, draw a circle using a form, pour the mixture and bake at 100 degrees until done. Do the other two swamps in the same way and set aside.
Vanilla cream
Pour and heat the milk in a saucepan, bring to a boil. In another bowl, beat the egg, yolks, sugar, flour and beat until smooth. Pour the egg into the milk mixture and stir until smooth. Remove from the heat, cool, add the butter and vanilla. Strain through a sieve and wrap the cream with cling film.
Chocolate cream
Melt the chocolate in a water bath. In a blender bowl, mix the remaining products and beat until smooth. Pour the chocolate and mash again until homogeneous.
Caramel cream
In a dry saucepan, add sugar, vanilla and salt. Once it starts to caramelize, pour cream, water and stir. After 3-4 minutes, pour the corn syrup and after it changes color, add the butter. Remove and cool.
Decoration and assembly
Whip the cream and add the sugar gradually. Add the vanilla, stir and transfer to a kitchen bag. Take the first loaf, mix part of the vanilla cream with 2-3 tablespoons of caramel, stir and spread with a spatula.
Cover with the second, on which spread the chocolate mousse and the remaining vanilla cream.
Finish with the third loaf, decorate its surface with the cream mix, garnish with the fruit and glaze with the liquid caramel. Cut, serve and enjoy the divine taste!
