Required products :

For the soup :

  • 500 grams of canned peas, rinsed and drained
  • 1 small onion, chopped
  • 2 medium-sized carrots, peeled and diced
  • 2 stalks of celery, cut into cubes
  • 2 tablespoons olive oil
  • 2 bay leaves
  • 1 teaspoon salt
  • freshly ground black pepper
  • 6 teaspoons of water

For the croutons :

  • 4 slices of bread, cut into cubes
  • 2 tablespoons olive oil
  • 100 grams of melted cheese / or smoked /

Method of preparation :

  • In a large saucepan, add the onions, carrots, celery, bay leaves and salt.
  • Sprinkle with olive oil and black pepper and add the water.
  • Heat a saucepan over high heat and when the soup boils, reduce the heat.
  • Let it simmer for about 20 minutes until the carrots are soft and add the drained peas.
  • Stir in the soup and leave it on the stove for another 10 minutes. Taste the broth to taste and season with salt and pepper if necessary.
  • In a medium bowl, sprinkle the bread cubes with olive oil.
  • Transfer them to a pan and bake lightly in the oven.
  • Spread the melted cheese on 1/2 of the croutons, glue with the other half and bake them again until golden brown.
  • Serve the soup warm, garnished with cheese croutons.
