How To Cook Pea Soup With Smoked Shank And White Wine - Recipe

Required products :

  • 1 small smoked pork shank
  • 250 grams of peas
  • 1 medium onion
  • 4 stalks of celery
  • 1 medium-sized parsley root
  • 1/4 tea cup dry white wine or dry sherry
  • 2 sprigs of thyme
  • freshly ground black pepper
  • left

 

Method of preparation :

Cut parsley, celery and onion as finely as possible. Put the smoked shank in a large saucepan with a thick bottom, add the vegetables and half of the peas.

Fill the products with 2.5 liters of cold water and put the dish on medium heat. Once the liquid has boiled, remove the foam that has formed (do not add salt at this stage).

Boil the soup for 30-40 minutes and then pour the remaining peas. Add the thyme stalks and pour the wine. Cook for another 2.5 hours. If the soup is too thick, add some more cold water.

Season with salt and freshly ground black pepper.

Before serving, carefully remove the shank and bone it. Cut the meat into small pieces and return them to the soup, which you serve hot.
