The basis of cheesecakes is cottage cheese. And the best choice for cottage cheese pancakes is fatty, moist home-made cottage cheese or cottage cheese with a high percentage of fat content (in stores they usually offer 9 percent). Cottage cheese can be used both regular and mashed. It will take 500 g.
We spread the cottage cheese in a bowl, carefully knead with a fork and drive in one medium egg. Usually sugar is added to the dough for cheesecakes, but you can do without it. We suggest adding 4 tbsp. spoons of sugar. Vanillin - optional. Mix all the ingredients until smooth with a fork or spoon.
Then add 3-3.5 tbsp to the dough. tablespoons of flour without a slide. It should hold its shape and gather in a lump, but not be dry.
Prepare a flat plate with two tablespoons of flour and a cutting board. Wet your hands with water, take a tablespoon of the dough and roll it into a ball. Roll the ball in flour and flatten into a pancake. Lay the cheesecakes ready for frying on the board.
We put the pan on medium heat, warm it up, grease with vegetable oil - 2-3 tbsp. spoons are enough. We spread the cheesecakes and fry until golden brown on one side, then turn over. If you see that the cheesecakes are frying too quickly, lower the fire.
