How To Cook Pickled Onions With Lemon And Aromatic Spices - Recipe

Required products :

800-900 grams of small onions
600 milliliters of water
100 milliliters of vinegar
250 grams of sugar
salt to taste
1-2 cloves garlic
1-2 bay leaves in a jar
5 grams of cloves
black pepper to taste
6 grams of cinnamon
1/2 lemon

Method of preparation :

Peel an onion, check it thoroughly, there should be no damaged or dark parts. All heads should be fresh and smooth.

 

Wash them with cold water and boil in 600 milliliters of water in which you have squeezed the juice of half a lemon (try not to get into the water citrus seeds, as well as parts of its soft inside).


Onions simmer for 2-5 minutes (depending on the size of the heads). Remove with a slotted spoon. Rinse with cold water and distribute in pre-prepared glass jars.

 

Make the marinade. In the water in which you boiled the onion, add the sugar and salt to taste and bring to a boil, stirring until the spices dissolve.
Pour the vinegar into the boiling marinade, stirring constantly, and immediately remove from the heat.


In each of the jars put 1-2 bay leaves, a few thin pieces of garlic (cut the cloves), a little cloves and cinnamon, 2-3 grains of black pepper. Pour the marinade, filling the dishes to the brim.

Cover the bottom of a large saucepan with a towel, place the jars that you have covered with lids (but do not close), fill them with hot water to the throat. Close the pan with a lid and leave on the stove until the water boils. When this happens, reduce the temperature and leave the jars on the fire for 10-35 minutes, depending on their volume.


Then carefully remove the jars and screw on the lids. Turn the dishes over, wrap them in a blanket and let them cool until they cool to room temperature.
Store in a dark place.
