Necessary products

For the dough:

  • 25 grams of fresh yeast
  • 100 milliliters of fresh milk
  • 150 grams of butter
  • 1 egg
  • 2 1/2 teaspoons flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

For the stuffing:

  • 150 grams of blue cheese with mold
  • 1/2 red sweet pepper
  • 1/2 yellow sweet pepper
  • 20 canned green olives
  • 3 tablespoons olive oil

1 egg for spreading

Method of preparation :

Remove the butter from the refrigerator for about 30 minutes before making the pies so that it can soften at room temperature.

Heat the milk a little and dissolve the yeast and sugar in it.

Sift the flour into a deep bowl, make a hollow in the middle and put the salt, egg and pour the sweet warm milk with the yeast.
Knead the dough, scooping the flour from the bottom up. When the dough becomes a ball, add the butter. Knead until elastic.

Put the dough in a bowl, cover with a towel and leave in a warm place for an hour to rise.

Meanwhile, make the filling.

Using a fork, mash the blue cheese. Peel a squash, grate it and cut it into cubes.

Mix the prepared products, pour olive oil and stir.

Knead the dough once more, then roll it out thinly (about 5 millimeters thick layer). Using a glass, cut out circles and in the middle of each put 1 teaspoon of the finished filling. Close the edges, forming crescents. Arrange them in a pan, the bottom of which you have greased with oil and covered with parchment. Leave a distance between them (about 3 centimeters). Spread the surface of the pies with beaten egg and bake them in a preheated oven to 190 degrees for about 30 minutes (until a golden crust forms).

With these quantities of products, about 25 pies with a delicious salty filling are obtained.
